Are you on the Larabar bandwagon?? You better believe I am. I love those things. My favorite flavor is Peanut Butter Cookie. Or maybe it’s Apple Pie. Or maybe it’s Chocolate Coconut Chew. Too many choices!! My son also loves Larabars and will eat them non-stop when we have them in the house. In an effort to keep the grocery budget in check, I attempted to make my own, and boy oh boy are they good.
In addition to being really tasty, these are ridiculously easy to make. The recipe in a nutshell? Throw everything in the food processor until smooth and press into a pan. Seriously. Now that you know it’s that easy, you have no excuse not to make these.
Vegan Chocolate Chip Peanut Butter Larabars
2 c coarsely chopped pitted dates
1 c peanuts
1/4 tsp salt
1/3 c mini chocolate chips
1 tsp smooth peanut butter (if needed)
Put the chopped dates, peanuts and salt into the food processor and blend until you have a finely ground, crumbly mixture. It will look dry, but should stick together if you ball it up in your hand. If it’s still a little dry, you can add the peanut butter and process for another 30 seconds. If it’s sticky enough then you can skip the peanut butter. Add the chocolate chips and process for about 30-60 more seconds, until the chips are mixed in. Press the mixture into the pan of your choice. I used a long, skinny loaf pan. Cut into bars and refrigerate.
